Pineapple Rice

2 tbsp coconut oil
3 cloves garlic, minced
1 pc red onion, minced
1 stalk onion leeks, chopped
1 stalk celery, diced
1 pc bell pepper, diced
1 pc carrots, diced
50g cashew
1 pc pineapple (small), diced
2 cups cooked rice
1 tsp turmeric powder
to taste salt
1pc egg


  1. Heat oil in a wok. Add garlic and sauté until aromatic.
  2. Add the leeks, celery, carrots and bell pepper. Sauté for a minute or so.
  3. Mix in the cashews.
  4. Add the pineapple and sauté until dry.
  5. Add cooked rice and mix well. Add turmeric powder and season with salt.
  6. Move rice to one side and crack in the egg. Mix with the rice.
  7. Serve. You can top with more cashews, dried chili and pork floss!
