The Lorax lemons come from Tublay, Benguet, where Lupe Corominag speaks for the trees. A militant naturalist, Lupe’s dedication to the forest biodiversity competes only with the desire to live peaceably within it. Their stories are inseparable as her father procured the empty property in the early 60’s and began planting trees when she was a little girl. Today, with a canopy over three stories high, the forest serves as a watershed and home to rare plants and animals.
It’s the tail-end* of the season and we’re grateful for all the sampaguita smelling goodness of these wondrous trees. From all the juice and unwaxed skins it’s served a myriad of items: brightened up pasta by @lakapati, @manilabake‘s lemon meringue, lemon muffins and lemon curd, @purpleyamph‘s marmalade and ice cream, @rocky_5th ‘s fresh squeezed lemonade for her son every morning and many a natural dishwashing aid. Thank you lupe, thank you trees 🙂 *we don’t know how much longer. The fruit is getting smaller and we can procure smaller volumes each week.
Storage
Fresh lemons will keep at room temperature or refrigerated for 1-2 weeks.

Lemons are full of vitamins, minerals, phytonutrients and antioxidants. They are especially good sources of vitamin C and folate.
Cooking Tips
You can preserve the entire lemon. Use the juice to make lemonade or a sauce for chicken or fish. Brighten up a pasta dish with its zest. Make citrusy desserts like lemon meringue, lemon muffins, lemon curd, ice cream. And use the peels to make an organic all-around cleanser!
