Orange-Yacon Compote

Easy, sugar free compote recipe that’s great on toasts, pancakes, or salads.

Ingredients
5 pcs orange
2 pcs yacon
1 stick cinnamon
2 tbsp water

Procedure

  1. In a pot, juice the orange and strain the seeds. Compost (or plant!) the seeds. Cut the oranges into small dice and add to the pot with the juice.
  2. Peel yacon and cut into small dice. Add to the pot.
  3. Add cinnamon stick and water.
  4. Cook on medium heat for 30-45mins or until the yacon is tender enough to be mashed with a fork.
  5. Let it cool and pack into a jar.
Time to make a new batch!
