Corn Fritters

Yield: 4 servings

1 1/2 cup sourdough discard
1 cup corn kernels (around 2 small cobs, cooked)
50g chives, chopped
1 pc habanero pepper, minced (optional)
1 tsp cumin
To taste salt
To taste pepper


  1. Combine all ingredients in a bowl. Mix well.
  2. Heat a non-stick pan and drop a spoonful of the batter in batches. Cook until you see bubbles forming on the surface. Flip and cook the other side. Yummy with shaved cheese or sour cream!
